Cheese Straws

I made these cheese straws this week and I didn’t like them, but everyone has been gobbling them up, so I guess I will keep the recipe.

Paula Deen’s Zesty Cheese Straws- Tweaked by Jan

 

Ingredients

  • 1/2 cup (1 stick) butter, at room temperature
  • 2 cups shredded sharp Cheddar, at room temperature (I used finely shredded sharp)
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper (more if you like ZIPPITY ZANG)

Directions

Preheat the oven to 300 degrees F. (325 if using stoneware)

In a food processor, add the butter, cheese, flour, salt and cayenne and process until a smooth dough is formed. Scoop it into a cookie press, fitted with a flat ridged tip. (I use star tip) Pipe the dough in 2-inch strips (I do one long curly piece around the pan and break them later) onto a lightly greased cookie sheet. Bake for 10 to 15 minutes (17-20+ if using stoneware) or until lightly browned.  ( I got by smell and look rather than time) Remove to racks to cool.
